As Michaelmas gives way to Martinmas and the crisp autumn mists settle upon our orchards, the estate hearth becomes the beating heart of Baronial Acres Grange. Gathering around the open fire, we celebrate the season's harvest—combining centuries-old Tudor banquet traditions with cherished family recipes passed down through generations.

Below, we share our full autumn recipes for you to craft at your own hearth. Should you prefer to savor these dishes prepared by our master bakers and hearth cooks, you may order them prepared directly for farmgate pickup or Guild share delivery using the order form at the bottom of this page.

I. Authentic Tudor Heritage Recipes

Recreated from historic 16th-century English household rolls, Thomas Tusser's husbandry logs, and noble estate feast records:

1. Spiced Heritage Capon with Apples & Sage

Authentic Tudor Main Roast ✦ Serves 4–6

A whole slow-growing pasture broiler roasted over hardwood embers, basted in spiced mead, sweet butter, fresh orchard apples, and garden sage until the skin achieves a deep amber glaze.

Estate Ingredients

  • 1 Whole Pasture Broiler (~5 lbs)
  • 3 Orchard Apples, sliced
  • 4 tbsp Farmstead Butter
  • 1/2 cup Mead or Hard Cider
  • 6 Fresh Sage Leaves
  • 1 tsp Coarse Sea Salt & Pepper
  • 1/2 tsp Ground Nutmeg

Hearth Preparation

  1. Pat the broiler dry. Season generously inside and out with salt, pepper, and nutmeg.
  2. Stuff the cavity with sliced orchard apples and fresh sage leaves.
  3. Melt butter with mead/cider in a small cast-iron pot. Truss the bird securely.
  4. Roast in a Dutch oven or rotisserie spit at 375°F for 1 hr 20 mins, basting every 20 minutes with the warm mead butter until golden and internal temp reaches 165°F.
  5. Rest 15 minutes before carving over warm pan juices.

2. Baronial Sourdough & Pasture Hen Pastie

Historic Merchant & Hunter Hand Pie ✦ Yields 4 Large Pasties

Shredded pasture chicken, roasted parsnips, leeks, and rich marrow broth folded into a flaky sourdough pastry shell and baked on thermal hearth bricks.

Estate Ingredients

  • 3 cups Roasted Pasture Broiler, shredded
  • 1 cup Roasted Parsnips & Leeks
  • 1/2 cup Rich Broiler Bone Broth
  • 2 cups Masonry Bakehouse Sourdough Pastry Dough
  • 1 Heritage Egg Yolk (for wash)
  • Salt, Thyme, & Black Pepper

Hearth Preparation

  1. Toss shredded chicken and roasted vegetables with bone broth, thyme, salt, and pepper.
  2. Roll sourdough pastry dough into four 8-inch rounds on a floured board.
  3. Spoon filling onto one half of each round. Fold over and crimp the edges tightly.
  4. Cut a small vent on top and brush thoroughly with beaten egg wash.
  5. Bake on a preheated baking stone at 400°F for 30–35 minutes until deep mahogany brown.

3. Autumn Spiced Hearth Custard Tart

Elizabethan Feast Dessert ✦ Yields 1 9-Inch Tart

A silky velvet custard scented with nutmeg and mace, set inside a sweet pastry crust and glazed with autumn elderberry conserve.

Estate Ingredients

  • 6 Heritage Egg Yolks (Speckled Sussex)
  • 1.5 cups Heavy Estate Cream
  • 1/2 cup Raw Wildflower Honey
  • 1/2 tsp Ground Nutmeg & Mace
  • 1 Sweet Bakehouse Tart Shell
  • 3 tbsp Elderberry Conserve

Hearth Preparation

  1. Blind bake the tart shell at 350°F for 12 minutes until light gold.
  2. Whisk egg yolks, raw honey, nutmeg, and mace together until smooth.
  3. Scald cream in a saucepan and slowly temper into egg mixture while whisking.
  4. Pour custard into tart shell and bake at 325°F for 30 minutes until set with a soft center.
  5. Cool completely and warm elderberry conserve to glaze over the top before serving.

4. Venison & Wild Bramble Stew with Barley

High Realm Feast Stew ✦ Serves 6

Slow-simmered estate game, hulled barley, and wild autumn blackberries cooked down in dark ale and bone broth until thick and comforting.

Estate Ingredients

  • 2 lbs Venison Stew Meat, cubed
  • 3/4 cup Hulled Barley
  • 1 cup Wild Blackberries
  • 4 cups Rich Marrow Bone Broth
  • 1 pint Dark Ale or Stout
  • 2 Carrots & 1 Onion, diced
  • Rosemary, Thyme, & Salt

Hearth Preparation

  1. Sear venison cubes in lard inside a heavy Dutch oven until browned on all sides.
  2. Add diced onions, carrots, and herbs; cook 5 minutes until fragrant.
  3. Deglaze pot with dark ale, scraping up browned bits.
  4. Add bone broth and hulled barley. Cover and simmer over low heat for 2 hours.
  5. Stir in wild blackberries during the last 20 minutes to thicken into a rich dark gravy.

5. Cider-Poached Pears with Sweet Cream

Orchard Harvest Dessert ✦ Serves 4

Hand-picked estate pears gently simmered in spiced pressed apple cider, cinnamon, and clove, served warm with unpasteurized estate clotted cream.

Estate Ingredients

  • 4 Hard Orchard Pears, peeled
  • 3 cups Pressed Apple Cider
  • 2 Cinnamon Sticks & 4 Cloves
  • 2 tbsp Honey
  • 1/2 cup Fresh Clotted Cream

Hearth Preparation

  1. Combine cider, honey, cinnamon sticks, and cloves in a deep saucepan. Bring to a simmer.
  2. Place peeled pears upright into the simmering cider. Cover and poach 25 minutes.
  3. Remove pears to serving bowls. Boil cider liquid down for 10 minutes into a thick syrup.
  4. Spoon warm cider syrup over pears and serve alongside a dollop of fresh clotted cream.

6. Sourdough Brioche French Toast

Family Morning Tradition ✦ Serves 4

Thick-sliced Masonry Bakehouse brioche soaked in a nutmeg and vanilla egg custard, pan-fried in golden butter, and drizzled with pure maple syrup.

Estate Ingredients

  • 8 Thick Slices Bakehouse Brioche
  • 4 Whole Yeoman's Eggs
  • 1 cup Whole Milk & Heavy Cream
  • 1 tsp Vanilla & 1/2 tsp Nutmeg
  • 3 tbsp Farm Butter
  • Pure Maple Syrup

Hearth Preparation

  1. Whisk eggs, milk, heavy cream, vanilla, and nutmeg together in a wide shallow dish.
  2. Soak brioche slices for 30 seconds on each side until saturated but firm.
  3. Melt butter in a heavy cast-iron skillet over medium fire.
  4. Fry slices for 3–4 minutes per side until golden brown and puffed.
  5. Serve hot with a pat of fresh farm butter and warm maple syrup.

7. Roasted Pumpkin & Bone Broth Velouté

Autumn Solstice Comfort Soup ✦ Serves 6

Hardwood-roasted sugar pumpkins blended into rich pasture-chicken bone broth, finished with heavy cream, toasted pumpkin seeds, and warm nutmeg.

Estate Ingredients

  • 1 Sugar Pumpkin (~3 lbs), roasted
  • 4 cups Broiler Bone Broth
  • 1/2 cup Heavy Estate Cream
  • 1 Leek, sliced & sauteed
  • Nutmeg, Salt, & Pepper
  • Toasted Pumpkin Seeds

Hearth Preparation

  1. Halve pumpkin, scoop seeds, and roast at 400°F for 45 minutes until tender.
  2. Scoop warm pumpkin flesh into a pot with sauteed leeks and bone broth.
  3. Simmer 15 minutes, then blend smooth using an immersion blender.
  4. Stir in heavy cream, nutmeg, salt, and pepper. Heat gently without boiling.
  5. Ladle into warm wooden bowls and garnish with toasted pumpkin seeds.

8. Spent-Grain & Wild Honey Hearth Loaf

Closed-Loop Heirloom Bread ✦ Yields 1 Large Loaf

A hearty, textured sourdough loaf baked with spent sprouted grains from our flock's mash cycle and sweetened with raw wildflower honey.

Estate Ingredients

  • 3 cups Stone-Ground Flour
  • 1 cup Spent Sprouted Grains
  • 1 cup Active Wild Sourdough Starter
  • 2 tbsp Raw Wildflower Honey
  • 1.25 cups Warm Well Water
  • 2 tsp Fine Sea Salt

Hearth Preparation

  1. Mix flour, spent grains, sourdough starter, honey, and water. Rest 30 mins (autolyse).
  2. Fold in sea salt and perform 4 sets of stretch-and-folds over 2 hours.
  3. Shape into a round boule and proof overnight in a floured proofing basket.
  4. Score top with a blade and bake inside a preheated Dutch oven at 450°F (25 mins covered, 15 mins uncovered) until deeply blistered.

9. Old-World Mulled Orchard Cider

Hearthside Evening Draught ✦ Serves 6

Fresh-pressed autumn apple cider infused with sweet cinnamon bark, cloves, dried garden mint, and orange peel, served piping hot from a cast-iron kettle.

Estate Ingredients

  • 1 Gallon Fresh Pressed Cider
  • 3 Cinnamon Sticks
  • 6 Whole Cloves & 2 Star Anise
  • 1 tbsp Dried Garden Mint
  • Slices of 1 Fresh Orange

Hearth Preparation

  1. Combine cider, orange slices, cinnamon sticks, cloves, star anise, and mint in a kettle.
  2. Bring to a gentle simmer over open hearth embers. Do not boil.
  3. Mull for at least 45 minutes to infuse full herb and spice aroma.
  4. Ladle through a fine strainer into clay mugs and serve steaming warm.

10. The Squire’s Skillet Egg & Sausage Hash

Harvest Gathering Breakfast ✦ Serves 4

Crisped roasted fingerling potatoes, sage pork sausage, and caramelized garden onions topped with four sunny-side farmgate eggs cooked right in the iron skillet.

Estate Ingredients

  • 4 Whole Farmgate Heritage Eggs
  • 1 lb Country Sage Pork Sausage
  • 3 cups Roasted Fingerling Potatoes
  • 1 Yellow Onion & 1 Bell Pepper
  • 2 tbsp Lard or Farm Butter

Hearth Preparation

  1. Brown country sausage in a heavy 12-inch cast-iron skillet; remove and set aside.
  2. Add farm butter to skillet drippings and crisp roasted potatoes with onions and peppers.
  3. Stir cooked sausage back into the potato hash. Make four small wells in the mixture.
  4. Crack one heritage egg into each well. Cover skillet and cook 4–5 minutes until whites set and yolks remain runny. Serve directly from skillet.
