Nestled into the earth on our North Plains property in Washington County, Oregon, the Cellar & Fermentation Vault at Baronial Acres Apiary is constructed using heavy timber post-and-beam framing set below the frost line. By leveraging the natural thermal mass of the Tualatin Valley soil, the vault eliminates the need for mechanical refrigeration, holding a stable ambient temperature of approximately 52°F year-round.
This uninterrupted thermal equilibrium creates an ideal sanctuary for delicate microbial ferments. Away from the temperature swings and ultraviolet light of the surface, raw honeys, wild yeasts, and mountain spring waters undergo slow, unhurried conversions in French oak puncheons and neutral glass demijohns.

The Alchemy of Cellared Meads
Mead is the world's oldest fermented beverage, yet its execution demands absolute purity of ingredients. In our subterranean vault, every batch begins with raw, unheated wildflower honey harvested from our Carniolan apiaries. We never boil or pasteurize the honey must, preserving fragile floral aromatics, wild pollen traces, and native enzymes.
Fermentations unfold over months rather than days. Our cellarmasters craft three distinct styles: Traditional Dry Meads that let the raw blackberry and clover forage speak for itself, Spiced Metheglins infused with estate botanical resins, and Melomels conditioned over wild Oregon berries.
Regulatory & Licensing Compliance
All meads, metheglins, and honey ferments crafted in our subterranean vault are produced by Baronial Acres Apiary, LLC under Oregon Liquor and Cannabis Commission (OLCC) Farm Winery and Brewery licensing provisions. All allocations, farm-gate pickups, and direct shipments strictly comply with Oregon beverage control regulations and adult signature delivery standards.
The Founders' Library Reserve (25-Bottle Archive)
From every barrel release, exactly 25 hand-numbered corked bottles are set aside in our subterranean library archive. These bottles are held for long-term cellaring (3 to 10 years) to document the aging evolution of Oregon honey ferments. Library reserves are made available exclusively to Founders Circle members during annual winter releases.
Monastic Oxymels & Aged Vinegars
Beyond fermented meads, the subterranean vault houses our traditional herbal Oxymel and Honey Vinegar programs. Originating in ancient Greek and monastic apothecary traditions, an oxymel ("acid and honey") is crafted by cold-macerating estate herbs, roots, and propolis in raw wildflower honey and organic raw apple cider vinegar.
The cellar's cool environment allows for extended 60-day slow maceration cycles without thermal degradation of sensitive botanical compounds. Concurrently, our honey vinegars undergo secondary acetous fermentation in small oak casks, yielding a bright, complex culinary acid with soft honey undertones.
60-Day Cold Maceration

Tualatin Valley Dry Mead
Fermented dry from raw wildflower and clover honey. Crisp, floral, and bone-dry with notes of white pepper and raw comb. Aged 12 months in French oak.
Spiced Metheglin
Raw honey mead infused with wild mountain sage, dried elderberry, and Douglas fir tips. Semi-sweet with a warm, resinous finish.
Pioneer Oxymel Tonic
Traditional herbal tonic combining raw wildflower honey, raw cider vinegar, propolis, elderberry, and wild mint. Sip neat or with sparkling water.
Aged Honey Vinegar
Oak-cask aged honey vinegar with a brilliant amber hue, vibrant acidity, and delicate wildflower aroma. Exceptional for dressings and reductions.
