The Underground Earthen Stone Cellar & Tudor Tasting Room

Carved directly into the High-Plains earth, our subterranean stone cellar maintains a natural, energy-free temperature for aging raw A2/A2 cheeses, traditional meads, and cured meats. Ascend into our Tudor-styled tasting room to sample estate provisions in an authentic, historic timber setting.

Passive 52°F Thermal Storage

Buried deep beneath the frost line, our stone vaults hold a natural 52°F temperature and 80–85% humidity year-round without mechanical refrigeration—the ideal climate for clothbound cheese and slow barrel fermentation.

Stone Vault Cheese Aging

Our raw A2/A2 cow, Icelandic sheep, and goat cheese wheels age on native fir planks. Natural cave flora develops authentic rinds on our Cheshire, Red Leicester, and Wensleydale wheels over 6 to 12 months.

Oak-Aged Mead Cellar

Subterranean oak barrels slow-ferment our estate honey mead away from light and temperature swings. The result is a smooth, dry, traditional honey wine bottled in heavy stoneware.

Tudor Masonry Construction

Designed with heavy oak timber framing, hand-chiseled stone walls, and lime mortar, mirroring the grand estate cellars of 16th-century England.
