We don't pasteurize away the flavor, homogenize the structure, or process out the natural enzymes. Our small, specialized dairy herd grazes our multi-species rotational pastures, producing rich, dense, high-butterfat milk loaded with natural probiotics and sweet alpine aromatics.
🐄 Our Dual Herds: Jersey Cattle & Caprine Dairy
Great cheese starts with exceptional milk. We manage two distinct, grass-fed herds to achieve the perfect balance of richness and delicate flavor:
1. Registered Jersey Dairy Cattle
Famous for producing milk with the highest butterfat and protein content of any major dairy breed. Our cows graze the top forage mass during our leader-follower pasture rotations, producing creamy milk ideal for golden butter, thick cream, and long-aged raw milk cheddars.
2. Dairy Goat Herd
Selected for gentle temperaments and sweet, mild milk production. Our dairy goats browse timberline scrub and clover pastures, providing rich caprine milk for traditional fresh chèvre, feta, and hard goat's milk cheeses.

♻️ The Whey Highway: The Ultimate Upcycling Engine
In a traditional modern dairy, fluid whey is treated as a waste product to be disposed of. At Baronial Acres Grange, sweet whey is pure gold. It serves as the primary engine for two other legs of our estate:
Piped to the Monastic Bakehouse: Sweet cream buttermilk and fluid whey replace plain water in our bread troughs, hydrating heirloom Einkorn and Spelt doughs to produce a moist, tender crumb and deep, complex sourdough acidity.
Piped to Swine Silvopasture: Residual whey is routed directly to our heritage Tamworth/Berkshire swine troughs. This rich protein source cuts external grain feed requirements by 45% while producing world-class whey-fed pork and prosciutto.
🧀 Subterranean Cave Aging
Once our cheeses are pressed and salted, they are transferred to our subterranean stone vault. Tucked deep underground where natural moisture and earth temperatures remain a steady 52°F – 58°F, our clothbound wheels develop complex, earthy rinds and rich, crystalline textures over months of patient aging.
