Culinary Living History • Crafted Straight From 13th-Century Monastic & Nordic Lineage

Raw Cow Milk, Artisan Cheeses & Cultured Dairy

Experience living food integrity. From raw cream-top Jersey & Guernsey cow milk to cave-aged Icelandic sheep cheeses, traditional strained Skyr, and Boer goat chevre—our provisions are hand-crafted under modern monastic care and aged in off-grid subterranean stone vaults in Crook County, Wyoming.

Our Unbroken Culinary Standard

"We don't imitate modern dairy trends—we unearth recipes straight from the history books. From 1,000-year-old Nordic Skyr straining techniques to 13th-century monastic stone-vault cheese curing, every wheel, jar, and butter crock we produce is an authentic piece of living culinary heritage."

Subterranean Cheesemaking & Culturing

Purity in raw pasture milk, natural stone-vault aging, and unyielding climate integrity.

Jersey, Guernsey & Heritage Herds

Our featured cow dairy operations rely on pasture-grazed Jersey and Guernsey cows yielding rich A2/A2 beta-casein raw milk with thick cream tops. Complemented by purebred Icelandic sheep and Boer goats, our multi-species herd provides an unprecedented range of artisanal fats and proteins.

Subterranean Aging Vaults

Hand-built beneath our heavy-timber structures, natural stone cellars maintain a steady 52°F ambient temperature year-round. This subterranean microclimate allows natural rinds to bloom slowly and flavor profiles to deepen without artificial heating or cooling systems.

Raw & Living Food Integrity

Offered directly to our farm share members under the Wyoming Food Freedom Act. We never high-heat pasteurize or homogenize, preserving living enzymes, natural probiotics, and the complex terroir of our Crook County pasture forage.
