"Step into The Hamlet—where 14th-century Tudor traditions meet high-plains ingenuity. Here, nothing is wasted, everything is crafted by hand, and every bite tells a story of pasture, timber, and time."
🏛️ Welcome to The Hamlet
When you visit Baronial Acres Grange, you aren't just visiting a farm—you’re stepping into a living, breathing medieval village built from heavy timber and native stone. Nestled beneath the timberlines of Crook County, The Hamlet is the artisan heart of our estate.
It’s where raw milk transforms into golden wheels of cheese, where stone-milled heirloom grains meet wood-fired hearths, where pastured broilers and whey-fed heritage pork are processed into peak charcuterie, and where subterranean cellars quietly age raw wildflower meads and digestive elixirs.
🥩 1. The Monastic Butchery & Poultry Processing
Sanitized 500 Sq. Ft. Facility: Outfitted with an overhead rail system, mobile poultry scalder/plucker station, and a specialized $35^\circ\text{F}$ hanging room for dry-aging.
Avian & Livestock Processing: Handles our 600 seasonal pastured broilers, whey-fed Tamworth/Berkshire swine, high-plains market lambs, and Boer chevron harvests.
Pastured Layers & Golden Yolks: Our mobile layer flock follows grazing cattle, producing deep-orange, pasture-raised eggs for estate masterclasses, local retail, and bakehouse pastry washes.
Old-World Charcuterie & Custom Shares: Features a dedicated vacuum-packaging deck and traditional dry-salt curing corner, serving regional families directly with custom swine, lamb, poultry, and goat shares under Wyoming Food Freedom laws.
🧀 2. The Tudor Micro-Dairy & Creamery
Raw Milk Perfection: Our sweet Jersey cows and dairy goats produce rich, high-butterfat raw milk that goes straight into hand-cranked butter and traditional raw-milk cheeses.
The Whey Highway: Instead of discarding nutrient-rich sweet whey from the cheese press, we pipe it straight to our bakehouse hydration tanks and swine forage troughs!
🍞 3. The Monastic Bakehouse & Hearth
Heirloom Grains & Wild Fermentation: We stone-mill organic Einkorn, Spelt, and Rye on-site, hydrating dough with sweet cream buttermilk and whey from the creamery, rich farm-fresh egg yolks, and wild starters.
Wood-Fired Masonry Hearth: Loaves are hand-shaped and baked over local hardwoods in our hand-built stone oven, producing a thick, blistered crust and an airy, pillowy crumb.
🍯 4. Earth-Sheltered Cellars & Apothecary
Subterranean Cave Aging: Tucked deep underground where temperatures stay naturally cool year-round, our cellars age raw wildflower honey meads, melomels, and raw milk cheese wheels in oak casks.
High-Plains Oxymels & Shrubs: We steep estate-harvested botanicals, raw honey, and wild orchard fruits into fast-turnover digestive tonics and oxymels—the ultimate historic high-plains refresher!
🥬 5. The Gothic-Arch Winter Vault (CEA)
High-Plains Solar Magic: Sub-zero Wyoming winter outside? No problem! Our two $30'\times96'$ Gothic-arch hoop houses use northern water-wall heat sinks to trap low winter sunlight.
Year-Round Harvests: Yields crisp winter spinach, lacinato kale, butterhead lettuce, and hardneck garlic even when snowdrifts pile high against the frame.
