Operating under the Wyoming Satellite Winery Law (W.S. § 12-4-414), The Cellar Meadery at Baronial Acres Grange revives this medieval tradition. We combine raw honey harvested directly from our estate hives along clover pastures with subterranean oak cask aging, creating small-batch craft meads and digestive elixirs completely free from synthetic sulfites or artificial clarifiers.

Our cellar production is divided into four distinct historic styles, ranging from oak-aged traditional meads to zero-proof botanical oxymels:

Pure, unpasteurized raw honey harvested from our estate hives, gravity-strained without heat, and fermented with pure well water. Aged for 12 months in French and American oak casks to develop notes of crisp clover, warm vanilla, and aged oak.

An ancient spiced mead infused with estate-grown sage, yarrow, thyme, and wild mint. Crisp, aromatic, and deeply refreshing, serving as the ultimate historic draft beverage.

Non-alcoholic health elixirs crafted by cold-steeping raw estate honey, raw apple cider vinegar, and medicinal garden herbs. Designed for digestive health, these fast-turnover oxymels offer a tart, invigorating high-plains tonic.

Like all workshops in The Hamlet, our meadery participates in the estate's zero-waste cycle:
Fruit Pomace = Heritage Swine: Spent chokecherry and plum pomace from our Melomel pressings are routed directly to our silvopasture swine troughs, adding rich antioxidants and fruit sugars to our heritage pork diet.
Apothecary = Creamery Pairings: Our botanical oxymels and shrubs are paired directly with cave-aged raw-milk cheeses during tasting room workshops to elevate flavor profiles.
15% Civic Tithe: Non-alcoholic botanical oxymels, raw honey batches, and fruit preserves are systematically allocated to our 15% Civic Shield for local Crook County food pantries and emergency reserve vaults.

Fermentation and barrel aging take place in our subterranean stone vault, where the surrounding earth maintains a natural year-round ambient temperature of 52°F – 58°F. This passive thermal control allows for a slow, cool fermentation that preserves volatile aromatics lost in modern industrial heating processes.
