Baked inside our wood-fired masonry oven, each loaf undergoes a slow 36-hour cold ferment utilizing our wild house sourdough starter, stone-milled regional heritage grains, and mineral-rich well water.
To maximize nutritional vitality, we enrich our sourdoughs with nutrient-dense raw whey harvested directly from our Claustral Creamery cheese vats. Our rustic sweets and galettes highlight unheated raw honey from our Carniolan apiary alongside antique stone fruits and berries harvested directly from our estate orchard.
I. Wood-Fired Hearth Breads
Claustral Whey Sourdough
Our flagship sourdough hearth loaf. Naturally leavened over 36 hours, mixed with raw creamery whey, and baked directly on the stone hearth for a blistered, dark mahogany crust.
Wood-Fired Skillet Biscuits
Heavy-crust pioneer biscuits hand-patted and baked in cast iron. Enriched with farm-fresh cultured butter and raw cultured buttermilk from our A2 Jersey dairy stock.
Spelt & Honey Monastery Boule
A dense, nutty loaf crafted from 100% organic whole spelt grain, enriched with unheated raw wildflower honey from our Carniolan apiary forage.
Herbed Garden Focaccia
Dimpled sourdough focaccia saturated with cold-pressed oil, coarse sea salt, and fresh herbs harvested daily from our production gardens and hoophouse.

Heritage Fruit Galette
Open-faced rustic pastry galette featuring seasonal harvests from our antique orchard (Pink Champagne currants, Pink Ume apricots, Napoleon cherries, or Pumpkin Sweet apples) wrapped in a flaky, lard-and-butter crust.
Wild Honey & Butter Tart
A rich, caramelized honey custard tart baked in a shortcrust pastry shell, using raw unheated wildflower honey from our subterranean cellar and cultured creamery butter.
Sourdough Cinnamon Rolls
Slow-fermented sourdough buns rolled with cinnamon spice, dark raw sugar, and estate butter, drizzled with a thick glaze made from A2 Jersey raw cream.
Currant & Spice Shortbread
Dense, buttery Tudor shortbread cookies baked with dried Jostaberry and Pink Champagne currants, lightly scented with nutmeg and mace.
