We offer fresh fluid milks, heavy cream, cultured butter, and hand-molded cheeses from three distinct dairy herds: rich Jersey cows, sweet-milking Nubian dairy goats, and rare dairy sheep.
Hand in hand with our dairy parlor, our pasture meat program reflects slow, ethical stewardship. From pasture-raised heritage broiler chickens and sweet caprine goat meat to grass-finished lamb, whey-fed pork, and Jersey beef, all livestock are raised naturally on lush Washington County pastures without prophylactic antibiotics or synthetic hormones.

Fresh Raw Jersey Cow Milk & Cream
Whole, unpasteurized creamline cow milk from our pasture-fed Jersey herd. Exceptionally rich butterfat with a golden cream top, available as whole fluid milk, heavy potting cream, or cultured buttermilk.
Sweet Raw Nubian Goat Milk
Naturally homogenized, sweet raw goat milk from our registered Nubian herd. Renowned for its high butterfat, easy digestibility, and smooth flavor—perfect for drinking, cooking, or home cheesemaking.
Rich Raw Sheep Milk & Yogurt
Thick, velvet-textured raw sheep milk boasting double the protein and butterfat of cow's milk. Offered as fresh seasonal fluid milk or thick, naturally sweet pot-set sheep yogurt.
Yellow Hill Cultured Farm Butter
Slow-cultured raw Jersey cream churned by hand in small wood-hooped batches, lightly salted with coarse sea salt. Exceptionally high butterfat (84%+) with a deep yellow color from pasture forage.

Claustral Raw Clothbound Cheddar
A traditional clothbound raw cow milk cheddar aged 6 to 12 months in our subterranean stone cellar. Golden paste with sharp, earthy undertones and fine crystallization.
Monastery Goat Tomme
A firm, natural-rind wheel crafted from pure raw Nubian goat milk. Aged 90 days in stone cellars for a smooth, nutty profile without sharp harshness.
Peat-Aged Sheep Milk Pecorino
Hard, savory grating and table cheese made from pure raw sheep milk. Aged 6 months, offering a rich butterfat texture and deep herbal notes from pasture grazing.
Raw Mineral Whey Allocation
Fresh, nutrient-dense sweet whey drawn straight from our cheese vats. Rich in bioavailable minerals, enzymes, and proteins—ideal for bread baking, lacto-fermentation, or livestock nourishment.

Pasture Heritage Goat Meat (Cabrito)
Lean, tender, sweet-flavored goat meat harvested from our pasture-raised Nubian herds. High in protein and iron with low intramuscular fat—ideal for slow stews, hearth roasting, and traditional curries.
Pasture Heritage Broiler Chickens
Slow-grown heritage broiler chickens raised outdoors on fresh Washington County pasture paddocks. Moved daily to forage greens and insects, producing dense, flavorful meat with deep golden skin.
Grass-Finished Lamb & Mutton
Mild, highly marbled lamb and traditional slow-cooking mutton harvested from our registered Suffolk and Polypay grass-fed pasture herds.
Whey-Fed Heritage Pork
Pasture-raised heritage pork finished on excess raw creamery whey, fallen orchard apples, and acorns. Produces dark, juicy pork with firm, flavorful fat caps.
Grass-Fed Jersey Beef
Slow-matured beef raised entirely on North Plains pastures and meadow hay. Renowned for fine muscle grain, yellow beta-carotene fat cover, and unmatched flavor depth.
Rendered Leaf Lard & Tallow
Kettle-rendered leaf lard and grass-fed beef tallow. Odorless, high-smoke-point cooking fats essential for flaky pastry crusts and traditional stove-top searing.
